لنابلس رائحتان وكلتاهما من الزيتون. الأولى الصابون. اتبع الرائحة إلى مصبنة، فبعض المصابن القديمة ما زال يعمل، وشاهد الرجال يصبّون بحيرة من عجينة الصابون الساخنة على أرض كاملة، ثم يتركونها تجمد ويقطعونها مكعبات بسلك ويرصّونها أبراجاً بعلو ثلاثة أمتار تشبه العمارة. صابون نابلس زيت زيتون وماء وقطرونة تُصنع تقليدياً من نبات صحراوي يُحرق رماداً. لا شيء غير ذلك. أما الرائحة الثانية فالكنافة، وكُلها واقفاً من حلويات الأقصى في السوق حيث تخرج الصينية من الفرن كل أربع دقائق وتنتهي في خمس. والبلدة القديمة عثمانية فوق مملوكية فوق رومانية، وقد تضررت كثيراً سنة ٢٠٠٢، فتتبع المقاطع المرمّمة تقرأ التاريخ القريب في الحجر.

Nablus smells of two things and both are made from olives. The first is soap. Follow the smell to a soap factory — a few of the old ones still work — and watch men pour a lake of hot soap paste across an entire floor, let it set, then cut it into cubes with a wire and stack them into towers three metres high that look like architecture. Nablusi soap is olive oil, water and a lye traditionally made from a desert plant burned to ash. Nothing else. The second smell is the kunafa, and you should eat it standing, from Al-Aqsa Sweets in the market, where a tray comes out of the oven roughly every four minutes and is gone in five. The old city itself is Ottoman on Mamluk on Roman, and it was heavily damaged in 2002 — look for rebuilt sections and you will read the recent history in the stone.

لماذا هذا الاسم؟ · Why this name?

نابلس مثال على ما تجيده العربية: هضم كلمة يونانية. أسس الرومان هنا فلافيا نيابوليس سنة ٧٢ ميلادية، أي المدينة الجديدة، فبرَتها العربية على مر القرون حتى صارت نابلس، لأن العربية بلا حرف P. فنابلس اسم يوناني بلكنة عربية. وأهلها يسمونها دمشق الصغرى.

Nablus is Arabic doing what it does well: absorbing a Greek word. The Romans founded Flavia Neapolis here in 72 CE — 'new city' — and Arabic wore Neapolis down to Nablus over centuries, because Arabic has no p. Nablus is a Greek name with an Arabic accent. Locals call the city Dimashq al-Sughra, little Damascus.
